Why Mise En Poix?

Mise En Poix is a play on two culinary terms: mise en place, meaning "everything in its place" in the preparation and organization to set a kitchen up for service, and mirepoix, a combination of ingredients—celery, carrot, and onion—that forms the foundation of many classic and beloved dishes.
Both speak to the same idea: that the finished result is shaped by what comes together behind the scenes. The details, the preparation, and the elements themselves all have a role to play. For us, hospitality is much the same. Whether it’s a restaurant, hotel, spa, theatre, or somewhere in between, the strongest experiences are built from many considered elements working together to create a place that feels cohesive, thoughtful, and distinctly its own.
